Paneer 65 Recipe | Indian Cottage Cheese Golden Fries | Easy and Quick Snack for Kids

Guess I need not say how much we love Paneer at home. By we I meant Konda, Peddu and myself. I can surely trust them to finish off anything paneer. While Chinnu loves to eat the paneer in PBM, he doesn't like it otherwise. Of course in most times when I make this snack there is hardly anything left for the elders at home. I simply added my name to the list to say they get the liking from me..:)

We have our club restaurant making something called as Andhra Paneer, a dish that is very spicy and super delicious (I know my dad will be furious reading the word super, but I guess it's now part of the language) Anyway they also have something called Paneer 65. We always order only paneer starters and of course paneer gravy for the meal. We never can get tired I tell you!

Those were those days, these days with the paneer being made at home so often, I am really tired of making just the same old menu. And it's cumbersome to make everybody eat that every week. So we resorted to making these different starters, which disappear the moment it's made. Remember Paneer Bonda? Well this is another batch that got done. 



Ingredients Needed:

Paneer / Indian Cottage Cheese - 400 gms, cubed into big pieces.
All purpose flour / Maida - 1 tbsp
Ginger Garlic paste - 1/2 tsp
Chili powder - 1 tsp
Cumin Powder - 1/2 tsp
Garam Masala - 1/2 tsp
Corn Flour - 1 tbsp
Chat Masala - 1/2 tsp
Salt to taste
Oil for deep frying
Method to prepare:

I used homemade paneer. 

Take all the ingredients in a bowl. Mix together so that all the ingredients coat the paneer pieces well. Sprinkle some water to make sure the flour sticks to the paneer. 

Heat a pan with oil. Once it's hot, gently drop in the paneer pieces and fry on all sides.

Drain on a kitchen towel. 

Enjoy with ketchup

Paneer Bonda | Easy and Quick Snack for Kids

As I may have said many times, Paneer in any form is most sought out at home. Off late with the frequent power offs, we run the risk of getting the milk spoilt. So we end up with loads of paneer all the time. And of course given the fact that Konda and Peddu love Paneer dishes we always try to make different snacks with it. Hubby dear has strictly asked me not to serve him PBM, with the frequency I ended up making it. 

So the next best thing we decided to do are these snacks for the kids. Konda loves all the varieties we make. This crumble paneer was what I had ready to make those Mini Cinnamon rolls. I ended up having more than I needed, so made these bondas for them. It disappeared quicker than I made them!

Ingredients Needed:

For the batter

Gram flour / Besan - 1/2 cup
Maida/ all purpose flour - 2 tbsp
Chilli pw - 1/2 tsp
Salt to taste
Cooking Soda a pinch

For paneer balls

Crumbled panner - 1 cup
Corn flour - 1 tsp
Ginger Garlic paste - 1/2 tsp
Garam masala - 1/4 tsp
Cumin powder - 1/4 tsp
Chat masala - 1/4 tsp
Salt to taste

Oil for deep frying

Method to prepare:

Crumble the paneer and mix in all the ingredients. Divide into small tight balls.

For the batter, take the ingredients in a bowl, slowly add water and make a semi thick batter.

Heat a kadai with oil. Roll the paneer balls in the batter and deep fry them in hot oil

Cook on all sides and remove to a kitchen towel.

Enjoy as such or with sauce!

Eggless Banana Chocolate Chip Mini Muffin with Flax Seed | Step By Step Recipe to Make Banana Bread

 Today is the last day of Blogging Marathon Edition#6. Time surely flies, especially when it is Blogging Marathon Time. I know I sound so boring, but life surely is hectic, even if I repeat this often. This edition has been really very tightly squeezed and what with the idea of pairing two bloggers to cook from each others blog. All my BM posts have been cooked just before posting, so you can imagine the haste the entire process has been. For all the planning I normally do, I know I end up being hard pressed for time so much. Still I have enjoyed the entire two weeks of blogging and our discussions.

I am working on the next theme already, hopefully it's should be even more interesting.

For the last day I got myself paired with Cool Lassie and I checked her collection of Egg replaced Cake/ Bread and found the first post I saw to be most appealing. It's Easy Eggless and Moist Banana Walnut Bread. I thought I should make this over the weekend but couldn't do. And I have been planning to use Flax seeds for a long time and since have two packs of flax seed powder. But I never came using it. It's also nearing it's shelf life. So got some ripe banana last night and knew I will have to get up early to make this. I wanted to send this for the kid's snack box.

Since my kids don't like any nut in their food, I had to skip walnuts. Then I saw that my all purpose flour was not enough. So made this even more healthy by adding more of wheat flour. Added chocolate chips to please the kids. Well I know all my bakes have these chips, it surely excites the little ones.

Finally when it was baked, I was so excited seeing how well it has risen. The taste was exceptionally good. Very moist and soft. I know next time I am going to make this as a loaf or a cake. I halved the recipe from what CL mentioned. This yielded me 12 mini muffins, 4 big muffins. Thanks for the wonderful inspiration CL!

But making this in mini size is always good to serve kids.

Step by Step pictures for making Banana Muffin















Dry Ingredients

Whole Wheat flour -  3/4 cup
All purpose Flour / Maida - 1/2 cup
Baking powder 1 & 1/4 tsp
Baking Soda - 1/4 tsp
A pinch of salt

Wet Ingredients

Sugar - 1/2 cup
Flax Seeds - 1/2 tbsp
Hot Water - 1 & 1/2 tbsp
Butter, melted - 1 tbsp
Oil - 1 tbsp
Curds - 1 tsp
Ripe banana - 2 big ones.
Vanilla essence few drops.


Method to prepare:


Shift all the dry flours in a bowl, keep it aside.

Pulse the banana to get the puree

Add the hot water to the flax seeds and keep it aside. It will foam after a while.

In a bowl, take the sugar, add flax seed mix, banana puree, butter, oil, curds, vanilla essence. Mix well.

Pre heat the oven at 170 degree C

When the oven is ready, line the muffin tray with liners.

To the wet ingredients, add the dry ingredients and mix well. There is no need to beat or mix fast.

Spoon into the cup to half full. Bake it at 170 degree C for 15 mins. Then reduce to 155 C and bake for 5 mins.

The big muffins had to be baked at 170 degree C for 20 mins and then at 155 for 2 mins.

Mini Cinnamon Rolls with Chocolate Glaze | Step by Step Recipe to make Cinnamon Roll

There are times when you tweak a recipe so much that you never can relate to the original idea that you got you going.This is what happened to the cinnamon roll that caught my fancy a while ago, when I happened to land in this blog. I was on search for mini servings when I was doing the BM last week. Ever since then I have been planning to bake these rolls and made Paneer at home and used it up for various other things.

Finally yesterday I had no option but to use the paneer and make these rolls as I had decided on Mini Bites for today's post. This recipe calls for cottage cheese and I read up on cottage cheese. The cottage cheese that's made in US is different from the Indian Cottage cheese that we call as paneer. But I thought if I am going to use it right away it shouldn't really matter. Guess I was wrong as I never got to use the paneer right away.
I also realized it wasn't my day to bake, as I forgot to add the important ingredient, sugar to the base. So ended up sprinkling castor sugar on top, thus creating another new recipe, even if I say so myself. Whatever  it is, the final end product was delicious and I had Peddu telling me that I will have to make it again tomorrow. And Konda wanted this packed for her snack to school. I can't ask for anything less. Best was the fact that I made these as mini rolls that the kids were able to eat on their own.

Step by Step picture Recipe:

In a bowl, take the flour, crumble the paneer, add curds,
 Add melted butter and mix well

 Mix into a soft dough and pinch out small balls.
 Roll out after dusting it with flour
Sprinkle cinnamon and sugar
Melt the chocolates by microwaving for a min.
 using a spoon press the chocolates well. Make sure you keep an eye, else it will get burnt.
 It should become a liquid.

 Spread out the chocolate on the roll.
 add chocolate chips
 Roll into a rope
 Cut into small rolls
 Grease a muffin pan and place them inside. brush on the top with milk/butter
 Bake at 170 degree C
 Remove and allow to cool
Glaze with chocolate sauce and castor sugar

Mini Cinnamon Rolls / Cinnamon swirls 

Ingredients Needed:

For the base:

All purpose flour - 1 cup
Paneer / Indian Cottage Cheese - 1/2 cup
Butter - 2 tsp
Curds - 2 tsp
Baking powder - 1/2 tsp

For the topping

Castor Sugar/ Brown Sugar - 1/2 cup
Melted chocolates - 3 tbsp
Chocolate chips as required
Cinnamon powder - 1 tsp

For the Glaze

Chocolate Sauce
Castor Sugar

Method to prepare:

Pre heat the oven at 170 degree C.

To make the base

In a bowl, take the flour, baking powder, pinch of salt, add crumbled paneer, melted butter, and curds. Mix well. This should be enough to get you a soft dough. Else if required you may add water/milk. But mostly it should not be required

Divide into small balls, dust well with flour and roll out into a long oval shape base.

Melt the chocolate, spread on the top, sprinkle chocolate chips. Dust with castor sugar and cinnamon powder.

Starting from one end, slowly roll over, rolling it tightly to form a rope. Cut into small rolls, these look more like a swirls. Bush the top of the rolls with butter.

Grease a muffin tray, place these rolls in it and bake for 15 - 20 mins at 170 degree C. Depends on your rolls for how long it will take to get cooked.

Once it's done, rest it for 5 mins, then pour chocolate sauce over the rolls and dust with castor sugar.

These become a great dessert to enjoy!

 
While I was still making it, Chinnu came to ask what I was making. When I told him that it was a roll, he very sweetly asked me to make him a chocolate cake. When this was done, he didn't want to taste it even. I literally forced him to taste, after one bite, he wanted one more. But I guess he still had his heart on a chocolate cake. Well it will be just that soon...

Onion Tomato Sandwich with Sambar powder Indian Style!

Today is last day of the Blogging Marathon Edition #6 and for the last day everybody suggested we do something different. So I paired up two bloggers to cook from each other. I had the names against numbers and paired it by randomly selecting the numbers. We decided to manage however the themes that we choose. Like if one was doing Regional Special, they had the option of selecting the same ingredients from their partner or adapt the recipe with their ingredients.

I was paired with Jay. I remembered this only yesterday and imagine my relief that I don't have to break my head on thinking of a new dish myself. I went through her blog and landed with the most simplest recipe, an Onion tomato Sandwich made with a twist of sambar powder. I have this already on the blog with general masala. Imagine adding Sambar Powder! I was so delighted that I could kill so many events in one shot!

I couldn't chosen so many other interesting recipes from her blog, maybe next time when I plan better. For now let's enjoy this simple yet delicious Twist with our classic sambar powder. I must say it did gave a wonderful taste. It's hot from the pan for you! If you can believe something can be cooked and blogged all within 15 mins, then this is for you.

I served them as mini pieces and was easy to eat.

Ingredients Needed

Bread - 4  slices
Onion - 1/2, Julienne
Tomato - 1/2 juicy halve
Ginger Garlic paste - 1/2 tsp
Salt to taste
Sambar powder - 1/2 tsp
Coriander leaves - chopped, a handful
Butter - 1 tsp
Oil - 1/2 tsp

Method to prepare:

Heat oil in a non stick pan. Add the onion, saute till they brown.

Then add ginger garlic paste and tomatoes. Add the rest of the ingredients. Mix well. Cover and let it cook until the tomatoes are soft and mushy.

To prepare the sandwich:

Spread butter on the bread slices. Spread some filling between two slices of bread and toast it in a sandwich maker/ make it as tawa sandwich.

Serve with ketchup on the side.

Eggless Banana Pancake Recipe | Quick and Easy Recipe for Kids

I am not sure if I will be able to make those cinnamon rolls that I have been planning ever since I thought I will take up mini bites. I had to come back home early as I was not feeling well. After couple of hours of rest, I was alright. Still it was pretty late to venture into making anything that might take beyond 10 mins of work. Reading what I wrote myself, I know it feels such a sloppy story, but it's a fact that a life of food blogger is pathetic at times..:)

Imagine telling your kid that you made those delicious pancakes for the blog and not for her! Konda was enjoying the treat and asked if she would get another serving, this time chocolate flavoured. I said I will make them again for her later. I was feeling so terrible saying that to her. Anyway I will make up to her soon I decided.

So these were those detectable eggless Banana Pancake drizzled with Condensed Milk and season with Cinnamon.

Eggless Banana Pancake with Condensed Milk and Cinnamon.

Ingredients Needed:

For the batter

All purpose flour/ Maida - 3/4 cup
Ripe banana, puree - 1/2 cup
Milk - 1/2 cup (more if required)
Baking powder - 1/2 tsp
Salt a pinch
Sugar - 3 tsp
Butter for cooking the pancakes.

For Garnishing

Condensed Milk - 3 tsp
Cinnamon powder - for sprinkling on top

Method to prepare:

To make the batter:

In a bowl, take the flour, mix in salt, sugar, baking powder.
Puree the banana, add immediately to the bowl. Mix well to make sure you get a lump less batter.
Slowly add in the milk and get a smooth batter. Rest it for 5 - 7 mins.

Heat a non stick pan, drizzle with butter. Pour a small ladle of batter over the hot pan. Simmer the flame and cook over low flame to make sure the pancake gets cooked well.

Meanwhile take the condensed milk in a microwave safe bowl. Micro for 30 secs.

When the pancake gets done, flip on the other side cook till it's golden in colour.

Transfer to a plate, pour the hot condensed milk on top, spread well and sprinkle Cinnamon powder on top

Serve hot.

Notes: 
Since the batter didn't rest for long, the pancakes will not turn out crispy. So pour little thick pancakes and cook over low flame for it to get done well.

Make sure you flip it with care.

The hot condensed milk with cinnamon tastes heavenly with the sweet banana pancake.

Cheest Toast with Thyme, Red Chili Flakes and Roasted Onions | Quick Microwave Mini Bites

I guess when you are pressed for ideas you really come out with some fantastic dishes. Like these Cheesy Toast with Thyme, Roasted Onions with Red Chili Flakes all made within 3 mins in microwave. well I had the need to make some Party Appetizers in Microwave and come up with a post for BM. With the limited time I had on hand, I was really stretching my ideas far.

Well I don't claim this was an innovation. Only made it differently to suit all the events that this entry has to go..:) Plus the fact that I have now got a new snack that Konda will love it and I can easily get it done is a boon. I normally can't get her eat onions, but in this dish she wanted more of it. And I ended up making it for her again.

So sending these Cheese Toast to Lavanya who is hosting the MEC this month themed on Party Appetizers. I hope you guys will plan to send something.

Ingredients Needed:
Bread Slices - 4
Onions - 1 medium
Dry Thyme - 1 tsp
Mozzarella Cheese - 1 tbsp
Salt to taste
Red Chili Flakes - 1 tsp or less

Method to prepare:

Trim the bread slices on the sides. Cut into 4 squares.

Chop Onions as julinnes, toss in oil and microwave for 2 mins. These onions turn really well roasted.

Spread the grated cheese on the four squares. Place the roasted onions on top of the cheese. Sprinkle Dry thyme, Salt, Red Chili flakes on top. Micro for 1 minute.

These are ready to munch on.



Notes: It helps to have Red chili flakes ready on hand for such dishes. Making these as mini eats makes it easy to eat as otherwise the bread might get chewy. This will be a quick dish that you can serve at parties, if you have all the other ingredients ready.

Ajwain Mini Samosa with Onion | Mini Samosa | Step by Step Recipe for Onion Mini Samosas

I have been breaking my head on what to make for the next post, while I had short listed some, none were things that I could do after getting back from home. Thinking of shortlisting the dishes for mini bites I felt I was doing something different and not really deciding on food. I have been talking to myself since morning and both Athamma, Hubby dear thought I have gone out of mind.

I must say this BM has been the most unplanned one. Though I mostly cook the previous day I will at least plan what to make and get it ready before dinner, so that we can have what I made before dinner. So making all those other dishes were out of question at 8. I had this flash thought that I have always been fond of Ajwain samosa but haven't blogged about it. So mini they will become and they did.

Everybody thought I had made more and were sad that I had only some limited numbers. The mini samosas are always great as it controls how many one eats. Everybody liked it so much that I am sure I am going to make these again.







Ajwain Mini Samosas with Roasted Onions

Ingredients Needed

For the outer layer

All purpose Flour/ Maida - 1 cup
Ajwain / Vammu - 1 tsp (more if you like)
Salt to taste
Ghee - 2 tsp
For stuffing

Onions - 1 medium
Red chili powder - 1/2 tps
Salt to taste
Chat Masala - 1/4 tsp
Amchur powder - a pinch
Garam Masala - 1/4 tsp
Oil - 1 tsp

Oil for deep frying

Method to prepare:

For the Ajwain outer layer

In a bowl, take flour, salt, ajwain and ghee, Mix well. Slowly add water and knead to a stiff dough. Cover with a wet muclin cloth and rest it for 10 mins.

To make the roasted onions.

In a non stick pan, heat oil saut in onion julinnes. Saute till the onions turn brown. Then add all the spices and combine well. Once the onions are brown and roasted well, remove and allow it to cool.

To make the samosas.

Dust the dough and roll out thin discs. Using a sharp knife cut into 3 inch strips. Place a spoon of the onion stuff and roll over diagonally across and cover well.

Press the sides and make sure the outer layer covers well.

Heat oil in a kadai and gently slide into the oil once it's hot. Cook over medium flame to get crisp samosas.

Eggless Butterless Banana Chocolate Muffins

Next in the Mini Bites series I have these delicious Eggless Butter less Banana Chocolate Muffins. As you must already know my kids love anything chocolate and I had some very ripe bananas which were begging to be used. So I thought I should address both in one shot and that's how this muffin came into being created.

I don't actually think I should deprive my kids their share of butter or Ghee. Infact I remember my kid's pediatrician telling me that I can give 2 tsp of ghee to the kids without fearing. We always make sure we add ghee to their dal rice and any curry that they like to eat.


So you know it's only natural I never think twice about adding butter to the baked dishes. It so happened that I didn't add and was surprised that the muffins turned out quite well too.

This is seriously such a simple recipe to get done that you will not believe once done. I didn't bother to take step by step as I have already taken enough recipes, check these Eggless Vanilla Muffin for step by step pictures. I pretty much did the same way. The recipe is very straight forward mixing and baking, no beating or creaming required.

This recipe might again look like a repeat of previous muffins on the blog, but I want to record every small change I have done to a recipe and that which came out prefect.

Eggless Butterless Banana Chocolate Muffin

All Purpose flour / Maida - 1 cup
Corn Flour - 2 tbsp
Cocoa powder - 2 tsp
Cooking Soda -  2 tsp
Icing Sugar - 1 cup

Wet Ingredients

Banana Puree - 3/4 cup
Milk - 1/2 cup

Chocolate Chips handful

Method to prepare:

Measure cornflour in a cup and add the flour over it. Then shift it together with cocoa and cooking soda. Add in icing sugar.

Pre heat at 185 deg C

Make a puree of the banana. Fold in the banana puree into the dry ingredients and gently combine everything together. Then add the milk.
Line the muffin tray with liners spoon in enough to fill half of the cups.

Bake for 12 mins at 185 degree C first and then at 155 for 3 mins.

Allow it to rest for 10 mins.

You might wonder at the shapes and the number. Though I got about 12 min muffins, they disappeared before I could even set the scene. I was left with only these for the picture..I guess that's really good right.
