Aloo Sandwich | Grilled Aloo Sandwich | How to Make Indian Stuffed Sandwiches with Potatoes Step by Step Recipe

Imagine riding against a wind strong enough to make your bike sway and chill drizzle hitting your face and all you could see were blurry images far off because you were busy trying not to get dust into your eyes. Well that's how I was coming back home from work this evening because the cyclone Thane was in full swing. This morning when I woke up, I almost thought it was midnight. It was pitch dark and I couldn't imagine why it was so. I went back to sleep and when I woke up again I understood the reason.

The whole day at work was almost cold and since we were doing the final snack of our December Drizzle at office, we were all busy not to notice the cyclone. We made Vegetable Soya chunks Biryani. I even made my colleagues take step by step pictures for the blog. And when it was all done, you could see some ten satisfied faces on job well done.
Coming to this Aloo Sandwich, it was such a delicious mix of spices and I can never say no for a sandwich. With the release due end of this month, my team has been working during the weekends and I thought I should appreciate their hard work with some homemade sandwiches. Since Aloo Sandwiches were already featured and knowing my team loves spicy food, I decided to make the masala more spicy and tangy. Surprising part was that both Konda and Peddu loved it. 


Even though I can't technically tag this colourful palette, I still would want to send this to Veena, who is hosting this month's Kid's Delight event. When I opened the sandwiches, it was colourful with the coriander and aloo etc. Ok it might be hard to accept, let's just say I want other kiddos to enjoy this sandwiches!..:)


Saute onion julienne with Pav Bhaji Masala, Chat Masala, salt, Amchur, green chilies in oil
Add fresh coriander leaves.
Microwave potatoes for 8 mins, then mash well.
Add the mashed potatoes to the pan
Mix and adjust the spices.
Trim the bread and spread the stuffing.
Pre heat the sandwich maker and grill till done.

Aloo Sandwich with Pav Bhaji and Chat Masala:

Ingredients Needed:

Bread Slices - 8
Potatoes - 2 medium
Onions - 1 big
Green Chillies - 2 medium
Pav Bhaji Masala - 1/2 tsp
Chat Masala - 1/2 tsp
Red chili powder - 1/2 tsp
Amchur powder a pinch
Salt to taste
Kala Namak a small pinch
Oil - 1 tsp
Butter for toasting

How to make Aloo Sandwich

Wash and mw potatoes for 6 - 7 mins, once done soak in water and peel. Then mash well, keep it aside.

Heat a non stick pan with oil. Saute onion julienne and green chilies till they turn colour, add all the masalas and mix well. 

Then add the potato mash and combine everything well. Adjust spice if required.

Meanwhile pre heat the sandwich maker.

Trim the bread slices on all sides as required. Scoop out the masala over one bread, cover with the other and press well. 

Grease the sandwich maker with butter, place the bread grease on the top slice and cover to grill. Grill till done.

Serve with sauce!

Masala Sweet Corn Chat Open Sandwich | Breakfast ideas for kids

If you don't find me complaining about time not being enough, then you know something is wrong. This post was to be a Masti Monday, then I thought maybe it will make it to be a Tasty Tuesday. Finally it is going to be Wondrous Wednesday! Wondering what's with these weekday rhyme? Well a local sweet shop happen to be posting their ads in the local newspaper since Monday, their special dish for each day. I was very eager to check out what it was going to be for Wednesday and was disappointed that they didn't do any ad today.

Konda wanted to follow her weekly menu from this week on. Though I was thinking I should put it up since Sunday, never came around doing it. So decided that tagging each day was going to be fun. She had this delicious Corn open Sandwich and decided it made a Masti Monday Breakfast for her.

I get to talk about it today. The corn was made just like the Masala Sweet Corn Butter Chat,  just I sprinkled little bit of pepper because of the cheese being added. I was also thinking I should some dried herb next time.

For the past couple of weeks it's been a corn feast for Konda. She said I should get her these sweet corn every week from our weekly vegetable shopping.

Days are tight! With much thinking, I decided I would skip the Blogging Marathon this month, knowing that the last week will be hectic for me. But then so will be October, but will surely have it then. I miss my Blogging Marathoners!

With so much to write always and so little time, I wish I can always remember these passing days. Just another three months and this wonderful 2011 will be off..

Now back to the tempting Open Sandwich that Konda loved so much

 
Microwave Masala Sweet Corn Open Sandwich
For the Masala chat
 
Sweet Corn - 1 cup
Butter - 1 tbsp
Chat Masala - 1 tsp
Chili powder - 1/2 tsp
Salt to taste
Pepper a pinch
 
For the Sandwich
 
Bread - 2 slices
Cheese -1 cube
 
Seasoning - any dried herb.
 
How to make the Masala Corn Open Sandwich
 
Wash the corns, add just enough water to the corn. Microwave for 7 - 10 mins depending on how much corn you are cooking.
 
Drain the water, add butter, all the masala and micro for 1 -2 mins.
 
To make the sandwich
 
Trim the bread, add grated cheese over the bread, top it with the masala corn, then again top it with some more grated cheese.
 
Microwave for a min.
 
Serve hot!
 
Note: Just caution the kid of the hot, as it's straight from the oven.

How To Make Homemade Peanut Butter | Homemade Peanut Butter Sandwich with Step by Step Recipe

For a long time I was wondering about the fantasy that revolved around Peanut Butter sandwich. The books I used to read as a kid always had this mentioned as one of the items the children in the book used to take for their picnic. Imagine always reading about such delightful items and wondering how these might actually taste when we make in our kitchen. Until few years back, I never really looked into how you make a peanut butter.

When I first checked on how this peanut butter was made, I was really surprised. Groundnut/ Peanut is such a common item in our household. Peanut powder is always stocked. And all it takes for this butter is to process for some more time, you get this wonderful spread.

Roasted peanuts are always stocked at home for the eternal Groundnut chutney that gets done for Idli/ dosa. So I just used the roasted peanuts to make this butter. Else you can buy the ready made roasted peanuts.

To make it more healthy I didn't skin the peanuts. You can even add chocolates to make it more interesting for the kids.

You just got to ensure you have a good blender/ mixer

Step by Step Picture Recipe to make Peanut Butter at home

1 cup Roasted Peanuts
Pulse it couple of times, then stir it using the spoon.
Add sugar or salt for taste.
Continue blending it more.
Add 1 tsp oil to get the peanut to run smoothly.
This is after 15 mins of pulsing it in intervals.
See how creamy it ended up!
Final spread after finishing the entire pulsing process.

Homemade Peanut Butter:

Roasted Peanut/ Ground - 1 small cup (50 gms)
Salt - 2 pinches
Sugar - 1/2 tsp
Vegetable Oil - 2 tsps

How to make Homemade Peanut Butter

Take the roasted peanuts in a mixer with steel blades. Pulse it couple of times to make sure the nuts crack down.

Add the salt or sugar. I added both and it was tasting great. If you prefer you can add either or both.

Pulse it again, continue pulsing by adding 1 tsp of oil. this makes sure the peanut runs smoothly.

Make sure you don't run the mixer continuously. Allow it to rest couple of minutes, else the mixer will get heated up.

Blend it till you get that creamy spread, add 1 more tsp to make sure the spread is smoothly moving around.

Scoop everything in a tin and store.


Notes:

If you want a nuttier spread, add a tsp of peanut in the final stage, you will end up with nutty spread.
Make it more delicious by adding chocolate bars in the end. You will get chocolate peanut butter, which as you know will be delicious and sought more by the kids.

To make the Sandwiches:

Trim the ends of the Bread Slices, spread as much as you would want on the top and cover it with another slice. Cut into desired size and serve it right away or pack for lunch.

Hung Curds Sandwich | Sandwich with Hung Curds Dip

We are starting the Blogging Marathon 8th Edition today. You can check on the participating bloggings in Blogging Marathon Page. As with other editions, I wanted to come up with themes that are challenging. I hope the bloggers take up the challenging themes and entertain us with amazing recipes.

I have chosen to do Cooking without fire for Kids. This is going to be the theme for this month's Kid's Delight hosted by Kamalika. I wanted to make sure I send in my share of entries. So took it up for the BM, which will force me to do the posts naturally.

For the theme, if you are using milk/curds, it is assumed that you already have boiled milk or set curds..:)



I sat really hard trying to make dishes that are kid friendly yet that can be made without cooking. I hope you enjoy these recipes and try out for your kids. As with all kids, all these recipes are not every kid's favorite. I have found that not all my three kids like the same dish. There are couple of dishes that are favorites of all three. Other ones which are liked by Konda and Peddu. Especially the recipes with bread, Chinnu makes sure he stays away.

So you will have to experiment with your kid and arrive at those dishes that they end up eating always.

For the first day, I decided to make sandwich with Hung Curds dip.

Hung Curds Dip

Curds / Yogurt - 1/2 cups
Pepper powder - 2 tsp
Salt to taste

For the sandwich

Bread Sandwich - 4 slices 


How to make Hung Curds Dip

Place the curds on the sieve and let it stand for 15 - 20 mins. The whey water will all be come out. If you want you can keep it for longer time.

Mix in pepper powder and salt, beat well to get a creamy dip. 

Trim the bread slices and spread the dip on the sandwiches and serve.

Lot of variations can be done with the dip, you can use different flavours.

Onion Tomato Sandwich with Sambar powder Indian Style!

Today is last day of the Blogging Marathon Edition #6 and for the last day everybody suggested we do something different. So I paired up two bloggers to cook from each other. I had the names against numbers and paired it by randomly selecting the numbers. We decided to manage however the themes that we choose. Like if one was doing Regional Special, they had the option of selecting the same ingredients from their partner or adapt the recipe with their ingredients.

I was paired with Jay. I remembered this only yesterday and imagine my relief that I don't have to break my head on thinking of a new dish myself. I went through her blog and landed with the most simplest recipe, an Onion tomato Sandwich made with a twist of sambar powder. I have this already on the blog with general masala. Imagine adding Sambar Powder! I was so delighted that I could kill so many events in one shot!

I couldn't chosen so many other interesting recipes from her blog, maybe next time when I plan better. For now let's enjoy this simple yet delicious Twist with our classic sambar powder. I must say it did gave a wonderful taste. It's hot from the pan for you! If you can believe something can be cooked and blogged all within 15 mins, then this is for you.

I served them as mini pieces and was easy to eat.

Ingredients Needed

Bread - 4  slices
Onion - 1/2, Julienne
Tomato - 1/2 juicy halve
Ginger Garlic paste - 1/2 tsp
Salt to taste
Sambar powder - 1/2 tsp
Coriander leaves - chopped, a handful
Butter - 1 tsp
Oil - 1/2 tsp

Method to prepare:

Heat oil in a non stick pan. Add the onion, saute till they brown.

Then add ginger garlic paste and tomatoes. Add the rest of the ingredients. Mix well. Cover and let it cook until the tomatoes are soft and mushy.

To prepare the sandwich:

Spread butter on the bread slices. Spread some filling between two slices of bread and toast it in a sandwich maker/ make it as tawa sandwich.

Serve with ketchup on the side.

Kids Lunch Box - Ideas for Sandwich fillings

Konda loves sandwiches. She can live on them for all three meals. There was a period when she was so crazy about Dosas. she would want Dosas for all three meals, then next year it got shifted to bread. It had to be with bread all the time. As with most south Indian families, I get to hear this sentiment being expressed often. Comments such as she eats only bread and nothing else. Somehow breakfast for elders at home, always meant eating Idlis, Dosas, Pongal or at least Pooris. But never anything with bread. One eats bread only when not keeping well. I have given up explaining that bread is recommended diet during illness because it is so healthy.

Anyway cutting the story short, I decided I would at least make it very filling and wholesome to avoid such complains.

With my boys, they eat their breakfast at school, so it will anyways be either dosa, aloo paratha, poha. Since Peddu loves Cheese Sandwich and Jam, I send that for him, while Chinnu takes Dosas with Sugar. Yes he is so fond of the sugar combo, I know it's bad to give in, but well I guess they will grow out of it. Also the amount of energy spent will balance that empty calorie going in.

When it comes to Konda's weekly menu, I try to mostly plan her meals. I always stock bread as it's easy to get her eat this. But when she plans a menu, she makes sure she eats. While Nutella, Cheese spread and Jam are her favorite fillings for bread, I also make Cheese toast, aloo stuffed, Paneer stuff for her bread fillings.
I decided that I should collect some ideas and try them myself. These ideas are collected from various sources, GDM members, recipe clippings. I thank them all for saving Moms in distress..:)


I often get emails from readers asking for menu help and ideas, I thought sharing these ideas on the blog will help many others.

Kids love food served in different shapes. I think they love those heart shaped, circle shaped ones. So you can cut out using cutters and make them sandwiches.

If you want to make a bunny, you can use carrot for ears, raisin eyes etc

Vegetarian Fillings

Sweet Fillings:

Peanut butter Jam
Peanut butter with some banana rings and little honey.
With Buttered bread slices with Honey, Banana slices
Toasted Bread with butter and Jam
With Nutella, Banana rings
Lightly grilled apple slices, honey and cottage cheese
Condensed milk

Savory Fillings

With Buttered bread slices with a layer of green pesto sauce and slices of tomatoes and cucumber
With Buttered bread slices with Hummus, Tomato, Cucumber slices, Salt and pepper if required
Cheese, Tomato, Cucumber
Cream Cheese with sautéed vegetables
Hummus, Grated Carrot, Cucumber
Tomato, Mozzarella, Avocado
Plain cheese sandwich
Potato cheese sandwich- Potatoes cubed very small and sautéed with little salt & pepper.
Carrot sandwich (Grated carrot sautéed with salt, chilli powder, onion)
Cheese, Cucumber with Salt and pepper
Cheese, Tomato  with Salt and pepper
Cheese (pepper jack) and mustard
Butter, Garlic spread, Italian herbs and cheese
Green Chutney with Cucumber

Club Sandwiches

Layer of pesto on one slice, a layer of sun dried tomato spread on another. A few tomato slices, and some greens, and a slice of pepperjack cheese. grill and wrap it in foil.
Butter/Green Chutney/Ketchup/Cheese slice
Boiled Potatoes, Grated Beets, Cucumber, Green Chutney

Leftover Subjis

Aloo Sabji
Rajma Masala
Channa Masala
Dals

Basically all vegetable curries can be stuffed if you sauté them dry, spice them up a bit and stuff between.

The sandwiches can be served plain, grilled, toasted on pan, or sandwich maker.

We now have a wide variety of cheese spreads seasoned with spices available. They make a great filling for a quick bite.

I think I covered almost everything, but then you never know. I would love to know and expand this list with more ideas I may have missed out here. Please do share them.

Tawa Aloo Sandwich | Quick Sandwich for Breakfast

There is nothing like a quick bite that gets you going. I can easily say this simple and quick Potato Sandwich was one of those dishes I made during my early years of cooking before marriage. I don't exactly remember when I started loving this sandwich, but  this was prepared quite often at home when I was a child. This was the quickest dish that Amma would dish out when she has excess bread on hand.

Hubby dear would always comment how I love anything with bread. I was so happy knowing that Konda has the same taste. When Amma made this Tawa Alu Sandwich, Konda was confused having two dishes she loved, as I had made Uggani for dinner. She didn't want to miss out either. So finally she said she would taste both.

This is a typical sandwich with South indian flovours.


Tawa Alu Sandwich

Ingredients Needed:

Bread Slices - 4
Potato - 1 big
Onion - 1 medium
Green Chilies - 1 long
Garlic - 2 cloves
Turmeric powder a pinch
Salt to taste
Ghee - 2 tsps
Mustard Seeds
Curry leaves - 4 -5
Oil - 1 tsp

Method to prepare:

Boil the potatoes either in a pressure cooker or in microwave for 6 mins. If you are cooking it in mw, once done, immediately put it in water so that the skin comes out well.

You can either mash it roughly or very fine. It depends how you like it. We mostly mash it roughly with huge potato pieces in between.

Heat a pan with oil, add mustard seeds, once it splutters, add the finely chopped onions, chopped green chilies, curry leaves and garlic. Saute till the onions are done.

Once the onions are done, add the boiled potatoes, mix well, add the turmeric and salt. Cover and simmer for 5 mins until the stuffing gets cooked well.

Trim the bread slices on sides. Heat a tawa, grease with ghee. Place all the slices on the tawa, simmer to low flame. Scoop the alu stuffing on two slices.

Once the bread gets crispy, place the other slices on the stuffed slices. Press well for it to stick together.

Simmer again for 2 mins.  Cut diagonally and serve with ketchup.
Notes: Remove the chillies from the stuffing before you use them for stuffing.
