Sweet Corn Butter Chat in Microwave | Easy and Quick Snack for Kids

Konda and Chinnu love corns in all forms. Be it the Indian version or the Sweet corn dishes. I found that Konda especially loves this Chaat made with Sweet Corn. Recently when we had taken her for dinner at a restaurant, she only eat this sweet corn chat most than the other dishes that were on the buffet. She was going oo, aa over such a simple dish that I had to make it back home for her more often.

When I took for vegetable shopping last week, the first thing that she picked up was this pack of corn nibbles. She said I should be getting her this every week. When I made it for them over the weekend, it disappeared before I could even say anything. I just tasted one, imagine just one. They skipped their lunch for this.

Making this in microwave is very quick and easy.



Microwave Sweet Corn Chat:

Sweet Corn kernels - 1 pack
Chat Masala - 1 tsp
Butter - 1 tsp
Salt to taste

How to make Sweet Corn Chat

Wash the corn kernels. In a microwave safe bowl, take the corns, add water just enough to cover it completely. Microwave for 6 -7 mins.

Drain the water, add the chat masala, salt, butter to the cooked corns. Mix well and micro again for 1 -2 mins depending on how done the corn is.

Serve it hot.

Notes: When you are serving for adults, you can sprinkle red chili powder, garam masala, pepper powder for more spicy chat.

Pudina Chutney | How to make Mint Chutney in Microwave | Step by Step Recipe

Chutney at home is always Groundnut/ Peanut chutney. At Amma's place depending on what she makes, she also makes Coconut Chutney along with Groundnut Chutney. So you can understand when I say that I grew up assuming that one will always serve coconut chutney for Adais, Pesarattu etc. But with Hubby dear, it has always been Groundnut chutney for anything. Since he is my premier customer for these dishes, I end up thinking I better make sure I make something he eats. No point in making something else and again wondering if he will like it or not.

One of my colleagues, who hails from Hyderabad, once told me that coconut chutney is a must at his place. Since then I always wondered how it is not prepared in hubby dear's native place. So you can imagine he has never a liking to this wonderful chutney! That meant  I only get to make only one chutney always. Anyway since the time we decided we are going to cut back on using so much of groundnuts, I then had the task of finding a substitute that's easy yet tasty to make. So in came Mint / Pudina chutney. I always pick up a bunch during my weekly shopping.

There are probably hundreds of ways to make this mint chutney. I make it about 5 different ways myself and today's post is one of them. This is the most easiest and simplest and even more simple because I made it in microwave. Tamilians call chutney as Thogayal, which is mostly not very thin but a thicker version and served with rice. And I also made the best by using the dals I roasted for the Molaga podi.

Step by Step Picture Recipe



Pudina Chutney | Mint Chutney

Makes : 1 regular cup of Chutney
Time : 5 mins for entire cooking.

Ingredients Needed

Pudina / Mint Leaves - about 3 handful
Red Chilis - 2 medium
Bengal Gram / Channa Dal - 2 tsp
Urad Dal / Black Gram Dal - 2 tsp
Salt to taste
Oil - 1 tsp

How to make Pudina Chutney

Wash and drain the leaves for a while.

In a microwave safe bowl add 1 tsp of oil and bengal gram. Microwave for 30 secs, if required for another 15 secs. It mostly starts smelling good at this stage, remove to a plate.

Next add the urad dal and micro for 30 secs, followed by dry chilies. At this stage you will see that the bowl will not have any oil left behind, so it's almost like dry roasting the chilies.

Remove and allow to cool. Add salt and blend in a mixer. First run the dals, followed by mint leaves.

Add water for everything to run smoothly.

Remove and microwave for 1 -2 mins depending on how much water you added. You can even add few drops of oil so that the raw smell leaves completely.

Serve with any tiffin or rice as a side.

1 Minute Microwave Eggless Chocolate Cake in Mug | Eggless Microwave Cakes | Step by Step Recipe

It was 8 pm when I returned from office when I suddenly had this urge to bake a cake. Naturally it had to be an eggless one. And if it was to be quick it naturally had to be baked in Microwave. Some ages back I had baked in a coffee mug but never came around posting the recipe. I don't remember it came out much like the buttery soft cake. Still it was good.

When this passion for baking got kindled again, I was in search of getting the perfect crumble, soft texture to my cakes, even those baked eggless and in Microwave. When I was chatting with Simmi, she enlighten me on how to get the perfect crumble, by adding cornflour. Wow it was so simple. I knew Cake flour was a flour with corn flour added, but never knew we can get around preparing it at home. Simmi suggested I add 1 tbsp of corn flour to 1 cup of All purpose Flour. 


I have been experimenting with this combo to get the perfect texture. But before that my attempt to bake with my kids around really turned out to be a big hilarious adventure. First I combined everything off very quick while both the boys were pulling around to see what was going next. Luckily I just tasted it and it was really so bitter! I forgot to add sugar. I had already added it to the mug, so hurriedly removed and add the icing sugar. Baked it

Since I felt the first one may not have been right, I wanted to try a new batch, so mixed again. But this time after popping into the oven I realized I forgot to add the Baking Soda! Wow I was really jinked. I was not about to give up, so again blended another batch. It almost sounded like a never ending saga. I got out these cute cups that Raji gifted me when we met. 

In my haste filled it more than needed and by 1 minute it over flew! Whatever the cake that remained at the bottom was very crumbly. 

 
Step by Step Recipe to bake Microwave Eggless chocolate Cake in a Mug

Take the butter in a non stick bowl.

Melt it at 1 melt.
In a bowl, take 1 tsp corn flour
 Add 2 tbsp All purpose flour

Add 1 tsp Baking Soda
Next goes 1 tsp of Cocoa powder
Add the melted butter to the bowl.
 I used some bitter sweet choco chunks
Melted it for 1 min at microwave.

Then add 2 tbsp curds/yogurt tot the bowl
Next goes 2 tsp of cooking oil.

Mix everything together but not very briskly
As I said I added the sugar finally!..

 
This was mug I used.
Grease the mug with butter, pour the batter

Bake it at 1 minute microwave
I made another batch in these cute small coffee cups.

Eggless Chocolate Cake in Mug in 1 minute
Ingredients Needed:

Dry ingredients

All purpose flour - 2 tbsp
Corn Flour - 1 tsp
Baking Soda - 1 tsp
Cocoa powder - 1 tsp
Icing Sugar - 2 tbsp

Wet Ingredients

Butter - 2 tsp
Curds/ Yogurt - 2 tbsp
Cooking Oil - 2 tsp

Bitter Sweet Chocolate chunks - 4 pieces.

Method to prepare:

To make the dry ingredients

In a bowl, shift the dry ingredients keep it aside.

Melt the butter in a bowl. Melt the chocolate chunks.

To the dry flours, add the melted butter, curds, oil mix well. then finally add the melted chocolate 

Grease a mug and pour the prepared batter.

Microwave for 1 minute.

Let it rest for 5 minutes before enjoying it.

I served chocolate sauce over it.

Peddu and Chinnu enjoyed it very much. I was trilled to get a quick dessert in as short as 5 mins.


Hubby dear did say that it was very moist though I liked it very much. Maybe since it was baked in microwave mode it came out this way. I baked another version which was really very crumbly and moist still..up next!

One Minute Microwave Cupcake with Chocolate Frosting | Microwave Recipes

When I made the Eggless Cupcakes with Chocolate frosting, I thought I might as well try the new silicone Microwave safe muffin tray. During our Blogger's meet, Divya happened to tell us that Lifestyle now has a wide range of Microwave Collections, naturally for the festival seasons. All the Microwave and Baking buffs immediately set out to investigate the lane. 

In fact there were quite a lot of collection. I resisted to get only this tray which looks very cute. So it is only natural that my kindled interest also probes me to try out this microwave method. I used the same batter that I used for convection baking. The beauty of baking in micro mode is that you have a cupcake in 1 minute! It was unbelievable as I thought that it would require at least 2 minutes as in the Banana Muffins. But then I realized that even that would have been actually done in one minute. 


Please check the recipe from the Eggless Cupcakes with Chocolate frosting, I used the same but the baking mode is different. When I had used the non stick muffin tray, few of them had a question on the metal tray being used. While it is true that metal trays should not be used, somehow it never struck me that as the store keeper said it was microwave safe. 

Still I would not advise on using it as it is advised against usage. But since I used only for a minute, it was not risky at all and no sparks came out. Anyway I immediately wanted to buy a microwave safe tray for baking. After all who wouldn't want a cupcake in one minute?


Line the muffin tray liners. Fill it to 3/4 of the cup.


Bake it for 1 minute in Microwave Mode. Allow it to cool and do the frosting.

If you are wondering why the frosting is not there, well I seem to have forgotten to click pictures of those..:)

As I said kids enjoyed it a lot. But the best compliment was from hubby dear and Mom who said Dad liked it a lot. What more can I ask for!

And today when I was going to make something else, Chinnu came running to ask if I was going to make chhooocalate muufin? Well I said he had to wait for another day. So I know I am going to bake it again.

Just saw that Ria is hosting Monthly Mingle themed on Chocolate. Now who can say no for that! This has been a real Chocolate Extravaganza!

Microwave Paneer Tikka | Baked Paneer Tikka | Indian Microwave Recipes | Indian Microwave Convection Recipe

Paneer Tikka has always been one dish that I never fail to order when we eat out. Infact if I remember right I have tried to experience how differently Paneer Tikka tastes in as many different places. Best have been in the ones I have enjoyed in Tandoor, which were really huge pieces yet so succulent, juicy and soft! In other places, it used to be real spicy and yet soft still.

So I always used to related to soft Paneer Tikkas whenever I eat this. Yet there have been occasions when it was served quite hard. I was delighted that my daughter shared my passion for Paneer Tikkas. And trust me, spicy in Tikkas are not spicy for her. She can easily eat couple of those real spicy ones, still claim them not being so spicy.

I already have a recipe for Paneer Tikka, that I had done on stove top without a Tandoor Oven the recipe is completely different from this recipe, which was shared by the MW Chef. And the fact that I prepared this Paneer Tikka in both "Only Micro Mode" and in Combo Mode of Convection + Micro Mode.

The difference between these two modes was that the Tikkas made in the Combo Mode came out soft and crisp on the top, while the Tikkas in the only Micro Mode, came out a bit harder. Of course if you ask me, I won't mind either ways.

This serves as a delicious starter and a great dish for Kids.

The below picture is made in Microwave Mode:


Mix the Paneer cubes along with Onion, Capsicum, Tomato pieces with the marinade and keep it aside for 15 mins.
 Then Micro the marinade for 2 mins for the masala to get cooked.

 Then using toothpicks, cube the paneer cubes along with tomato, onion and capsicum and micro for 1 - 2 mins in micro mode.

This is done in combo mode, where the same marinade is used and using toothpicks, club the paneer and rest. Pre- heat the oven for 210 degree and then in Combo mode using Convection + Microwave mode, cook the Tikkas for 15 mins.

Microwave Paneer Tikka in Microwave Mode:

Paneer - 250 gms
Ginger Garlic paste - 1 tsp
Garam Masala - 1/2 tsp
Cumin Powder / Jeera - 1/2 tsp
Corn Flour - 2 tbsp
Chili powder - 1 tsp
Curds/ Yogurt - 1 cup, hung
Salt to taste
Oil - 2 tsp
Kesar colour a pinch (opt)

For Garnish

Capsicum - 1/2
Tomatoes - 1
Onions - 2

Method to prepare:

Wash and cube Paneer pieces into 2 inch squares.

Cut Onions, Tomatoes and capsicum into 2 inch square pieces.

Made a marinade of hung curds, ginger garlic paste, corn flour, garam masala, red chili powder, salt, cumin powder along with oil. Add kesar powder if you are using. Mix the paneer, onion, tomato and capsicum into this marinade. Keep it aside for 15 - 20 mins.

In Microwave Mode:

In a microwave safe bowl, cook the marinade for 2 mins.

Then using tooth picks, insert the onions, capsicum, tomato with the paneer in between.

Micro for 1 -2 mins.


Baked Paneer Tikka | Paneer Tikka in Convection Microwave Mode:

Pre Heat the oven at 210 degree, then switch off the oven

Follow the same process of marinade the Tikkas.

In a microwave bowl, micro the marinade for 1-2 mins.

Arrange the Tikkas in a Tooth pick.

Then switch to Combo mode by choosing Conv + Micro Mode, arrange the Tikkas on the tray and cook for 15  to 20 mins.

How To Make Ghee Rice in Microwave | Quick 'n' Easy Ghee Rice in Microwave | Step By Step Recipe

Ghee Rice must be the simplest dish one can make, especially as meal to go with spiced gravies. I normally make this for non veg gravies and spicy veg kurmas. Since I only post Vegetarian in this blog, I will only link to the Ghee Rice that is done in a Rice Cooker and a regular pan.

This recipe was shared by the MW Chef I talk about. She made this with such easy you never knew it got cooked too. I tried it and it comes done as a breeze. Though as I say cooking Rice in Microwave takes time so it is not exactly Quick though it is very easy! Still when compared to microwave cooking this rice is quick.

Step By Step to make Ghee Rice in Microwave

Cooking Mode : Microwave Mode
Cooking Time : 30 mins



Soak rice for 15 mins.

In a big bowl,  add the ghee, onions, green chilies, ginger garlic paste, cloves, cinnamon, spring onions and micro for 5 mins.
Add water to the sauteed masala and micro for 25 mins.

This is after 10 mins.

Keep stirring in between 10 mins,
 Water is all absorbed completely, put it back for the remaining time.

Add the salt in the final stage, and mix well.


Remove from oven, cover with a lid and keep it aside for 5 mins.

Rice is ready to serve.

Ingredient Needed:

Basmati Rice - 2 & 1/2 cups
Water - 4 cups
Onions - 2 medium
Spring Onions - 1 bunch
Ginger Garlic paste - 1 tsp
Green chilies - 2 medium
Cloves, Cinnamon - 2 each
Salt to taste

Ghee - 2 tsp

Method to prepare:

Wash and soak the rice for 15 minutes.

In a Microwave safe bowl, take the ghee, cloves, cinnamon, onion julinnes, finely chopped spring onions, ginger garlic paste, green chilies and micro for 5 mins.

Remove and stir well.

Add rice to the bowl along with water. Micro for 25 mins.

Remove and stir in between 10 mins and finally stir again at 5 mins.

Once it is done, remove and cover with a lid for 5 mins for the rice to settle down.

Serve with spicy gravy dish.

Microwave Grilled Sandwich | Microwave Convection Oven Recipe | Step By Step Recipes

The current fancy for Konda is bread. While couple of years back it was Dosa any time of the day, the last two years it has been bread. She can eat anything with bread and anytime. That leaves me trying out different combination. This grilled sandwich is something I made for her breakfast. It gets done quickly. Of course on a stove top it is much quicker. But the ease of Microwave is different!

I made the stuffing with simple onions, tomatoes and capsicum in the microwave. Grilled the bread in the grill mode.



Chop all the vegetables as juliennes.


In a microwave safe bowl, add oil

Add all the vegetables along with salt . Micro for 5 mins

Then remove, stir well, add red chili powder.


Micro again for 5 mins


Check if lot of moisture is released. If so, micro for another 5 mins.


Spread the butter on both sides, grill for 2 mins each side


Scoop the stuffing and place on top of one grilled bread.





Press the other bread over the stuffing. Press firmly and grill again for 2 mins.


Serve with tomato sauce.
Microwave Grilled Sandwich

Onions - 1 medium
Tomatoes - 1 medium
Capsicum - 1/2 medium
Salt to taste
Red Chili powder as per taste
Oil - 1 tsp
Butter - 2 tsp
Bread Slices - 8

Method to prepare:

In a microwave safe bowl, take all the finely chopped vegetables. Micro for 10 mins. Once done, check for water. If it has more moisture, micro for 5 more mins.

For grilling the slices, change to grill mode. Spread the butter on both sides of the bread. Grill for 2 mins on one side. Then flip to the other side for 2 more mins.

Once the slices are grilled well, place the stuffing on one side, press the other slice over it. Grill again for 2 mins.

Serve small bite size sandwiches with tomato sauce.
