Lemon Sevai Recipe | Rice Noodles with Lemon | Quick Breakfast Recipe

Ever wonder how a simple dish like a sevai can transport you to a different time in memory? Well that happens with me and every time I eat I never forget to remember those days. I even wonder if those days were really as wonderful they are in my memory. Well I guess they must have been if I remember about those times so much.

The many mornings when Amma would so adventurously declare that she is making Idiyappam for breakfast. The glow and the delight that comes to my step was infectious. Later about couple of hours later, with the spirits still intact we would declare we will conquer the Idiyappams sometime. By then everybody at home would have tried their hands at making the dough come through the thin holes of the idiyappam maker.

By then, Amma would have changed about 3 -4 achus/ press for us to experiment. And by then Amma would have also declared that she will lay hands on the best recipe for making idiyappam at home without getting anybody to help her. Well it was a long time ago and finally she did lay her hands on the best recipe that finally made her press out delicately pretty idiyappams. It was sad that the discovery came late, as by then we had ready to make idiyappams / sevais available for us to buy. The work involved to make the sevai at home was almost too much, that we decided we might as well buy it precooked.

Thus came to an end the story of how we never ventured at making Idiyappams at home, though we do have a foolproof recipe that comes out very pretty. For those of you who are not initiated into what a Sevai means, it's a thin rice noodle made with rice flour dough, pressed out as thin strings, steamed and then eaten in many ways.

Well technically Sevai is different from Idiyappam. What we were attempting to make at home was Idiyappam. Now we get ready to cook Sevai, Idiyappam. One wonders why to take so much pressure in preparing these at home when you get good quality brand.

Coming back to Sevai, one can make Mango Sevai, Thenkai Sevai, Tomato Sevai, Masala Sevai, Sevai Pulao, Sevai Upma. Lemon Sevai and of course simply mix it with sugar and fresh coconut.

Today's recipe will be Lemon Sevai.





Lemon Sevai

Ingredients Needed

Pre cooked Sevai - 1 packet
Lemon Juice - 1 big
Curry leaves few
Cashew nuts - 10

Mustard seeds, Urad dal - 1/2 tsp
Dry red chilis - 2 long.
Salt to taste
Oil - 2 tsp

Bengal gram - 1/2 tsp

How to make lemon sevai.

In a pan cook the sevai as per the instructions. Mostly this is cooked and drained.

Heat a non stick pan with oil, saute mustard seeds, Urad dal, cashew nuts, curry leaves and red chilis. Saute well, then add the cooked sevai and mix well. Add salt and check.

This takes about 5 mins to get done if you have cooked sevai.


In this version, you just saute onions till it turns colour, proceed with adding the cooked sevai to the pan. 

Serve both lemon and onion sevai with pickle and your quick breakfast is ready.

Upma with Leftover Idli | Idli Upma | Bachelor Feast

It was a relaxed Sunday scene at home. But today being the last day of a ten day long vacation for the kids, there was this increased sense of hurried playing and running around. Breakfast was the usual Poori Channa, which the kids enjoyed. They came back from their play time at Park and were exhausted enough to eat well. 

I wanted the second day of Blogging Marathon to be quite simple. This quick Umpa from Leftover Idlis proved to be the best suited. These Idlis were made with Idli rava and Moong Dal and were also seasoned. But you can make this Upma with the regular idlis that you make. After seasoning, the plain idlis turn into a tasty dish that one can't expect.

Step by Step of making Upma with Leftover Idlies

Take the idlies that are left over.

Grate them using a grater.

You will end up getting a fine crumble of idli powder.

Heat a pan with oil, add the seasoning ingredients, saute till done.

Add the grated idli to the pan, mix well.

Add turmeric powder, saute well. Cover with lid and simmer for 5 mins.

Leftover Idli Upma

Ingredients Needed:

Prepared Idlies - Check How to make Idli
Onion - 1 medium
Curry Leaves 4 -5
Green Chilies - 1 medium
Mustard Seeds, Urad dal - 1 tsp
Bengal Gram - 1 tsp
Turmeric powder 1/2 tsp
Salt to taste
Oil - 2 tsp

Method to prepare:

Get the idlies to room temperature if these are refrigerated, else it might be very cold to handle.

Grate the idlies on a grater. Heat a pan with oil, add mustard seeds, bengal gram, urad dal, curry leaves, Green Chili, and finely chopped onions. Saute till the onions turn light brown.

Then add the grated Idlis to the pan, add turmeric powder, mix everything together. Cover with lid and simmer for 5 mins.

Serve hot!

Amma was really taken in with this taste as she normally never prepares this way. And I was happy having made something that she liked.

Quick Tomato Chutney | Easy Tomato Chutney | Bachelor Cooking

When you decide on dosas or idlies for breakfast, having a quick chutney handy makes the task easy. We are always on the lookout for good recipes. Though we make Tomato Chutney in different ways, this is yet another way of making a quick chutney. Not only is this quick, it tastes great for a easy breezy dips.

You can make this less spicy if you want to give this to kids. We made this as a quick one when Amma had tried making an idli with Moong Dal and Idli Rava. I suggested this to a bachelor friend, who tried this and said wow.


Quick Tomato Chutney - 2

Tomato - 1 medium
Onion - 1 medium
Red Chilis - 2 -3
Curry leaves - 2 -3 twigs
Tamarind a small marble size
Garlic - 2 -3 cloves
Oil - 1 tsp

For Seasoning

Mustard Seeds - 1/4 tsp
Urad Dal - 1/3 tsp
Curry leaves 2 -3 leaves

Method to prepare:

Chop all ingredients.

Heat a pan with few drops of  oil, saute the chopped ingredients for couple of minutes. You need not actually saute them very brown. About 3 mins is just enough.

Allow to cool, then grind to a smooth paste. Heat the pan again with 1 tsp of oil. Splutter mustard seeds, urad dal and curry leaves. Pour this over the ground tomato chutney.



Enjoy with your Dosas or Idlis.

How To Make Ghee Rice in Microwave | Quick 'n' Easy Ghee Rice in Microwave | Step By Step Recipe

Ghee Rice must be the simplest dish one can make, especially as meal to go with spiced gravies. I normally make this for non veg gravies and spicy veg kurmas. Since I only post Vegetarian in this blog, I will only link to the Ghee Rice that is done in a Rice Cooker and a regular pan.

This recipe was shared by the MW Chef I talk about. She made this with such easy you never knew it got cooked too. I tried it and it comes done as a breeze. Though as I say cooking Rice in Microwave takes time so it is not exactly Quick though it is very easy! Still when compared to microwave cooking this rice is quick.

Step By Step to make Ghee Rice in Microwave

Cooking Mode : Microwave Mode
Cooking Time : 30 mins



Soak rice for 15 mins.

In a big bowl,  add the ghee, onions, green chilies, ginger garlic paste, cloves, cinnamon, spring onions and micro for 5 mins.
Add water to the sauteed masala and micro for 25 mins.

This is after 10 mins.

Keep stirring in between 10 mins,
 Water is all absorbed completely, put it back for the remaining time.

Add the salt in the final stage, and mix well.


Remove from oven, cover with a lid and keep it aside for 5 mins.

Rice is ready to serve.

Ingredient Needed:

Basmati Rice - 2 & 1/2 cups
Water - 4 cups
Onions - 2 medium
Spring Onions - 1 bunch
Ginger Garlic paste - 1 tsp
Green chilies - 2 medium
Cloves, Cinnamon - 2 each
Salt to taste

Ghee - 2 tsp

Method to prepare:

Wash and soak the rice for 15 minutes.

In a Microwave safe bowl, take the ghee, cloves, cinnamon, onion julinnes, finely chopped spring onions, ginger garlic paste, green chilies and micro for 5 mins.

Remove and stir well.

Add rice to the bowl along with water. Micro for 25 mins.

Remove and stir in between 10 mins and finally stir again at 5 mins.

Once it is done, remove and cover with a lid for 5 mins for the rice to settle down.

Serve with spicy gravy dish.

Onion Podi Dosa, Karam Dosa ~ 101 Dosa Varieties!

It was a late afternoon in the summer of 98, when I was studying a course in computer. Along with my two friends we decided to eat at the neighboring hotel. Tiffin are quite common at all times but eating out was not so common then. I used to get my regular 100 Rs as pocket money. Amma has been giving me since I started college. Not that I spent much other than the petrol for the two wheeler.

Having decided to eat, I was apprehensive if parents would object to me eating out. We were never encouraged to eat out and we never even thought of doing something without their knowledge. But are there times as first always right. I think it was one of those firsts. Of course until much later, I never confessed to having indulged in a sinful feast on dosas back from institute.

I have always been fond of dosas, be at home or outside. So it was natural that I order a Dosa variety. Browsing through the menu card, my eyes kept going back to the Podi Dosa on the menu. Being so crazy of the podi that Amma makes and dosas in general, I was at lost imaging how yummy it was going to be. Believe me, the dosa that came finally to my table, kept to its fantasy!

It was beyond words can express my joy I felt devouring every bit of that dosa and couldn't get it out of my system for a long time. Imagine my misery, enjoying something so delicious, yet unable to share that joy with Amma as it was an illicit dealing..:)

Share I did, many years later. Still Amma was candid enough to ask where I had that. I had to gulp the details and just tell her how it was made. The long lost happiness finally came in when I was able to recreate the magic at home. Of course for all the flowing adulation I am bestowing on this, it is natural this type is a common fare at most homes, still it was something that had caught my attention. And if even after nearly a decade and half, if the mind feels the satiation, I am sure it was very delectable.
 

The trick lies on browning the onions to the right colour and then spreading the podi over it

I must say this most surely falls under the Bachelor feast as it is something one can do within minutes, provided if one can assemble the required ingredients in short time.

There is no ingredient at all.
 


Get yourself a bowl of Dosa batter.
Your dose of podi or Gun powder as it is called at our place
Finely chopped onions.
A dollop of ghee/Clarified butter

Heat a dosa pan, spread a ladle of batter as you regularly do, sprinkle chopped onions. Sprinkle oil on the sides
Once done, flip on the other side, allow it to cook. Simmer for couple of mins for the onions to get browned.
Flip it back to the original side. Sprinkle the podi/ spiced powder over the dosa, pour the ghee over it (the ghee should be hot for it to spread evenly)

Transfer and just eat!

Wasn't that quick? Believe me it is surely heaven on a plate!

Next one on the plate is a simple Karam Dosa, which is same as the Erra Karam Masala Dosa but even simpler!

Chop Onions finely, mix in Red Chili powder, salt to taste. Mix well

Pour of ladleful of Dosa Batter, spinkle a spoon of this Onion, Chili mix over the top. 

Flip onto the top side down for it to get cooked. Once done turn it back again.

This is different from the Erra Karam Dosa as that was ground, while this is even more quick!

Microwave Besan Ladoo!

You know I have always known it is easy to dish out of microwave but only after making Besan Laddo, I reconfirmed to myself how really easy it is. As usual I had to wait till the last moment to make for the Microwave Easy Cooking Event, and finally what, the microwave Besan Ladoo ends up as such a lovely recipe for keepers.

If you have a sweet tooth and craving for something nice, this is a dish that you can whip within 10 mins. There really can't be something quickly than this. And the ingredients are something so easily accessible that you don't have to fret about! I remember seeing this in Tee's space and saw it was almost the same way I do. Its lovely that she had sent her entry to the same event years back!

This is something you can make as quick treat to your kid and very healthy too.

Quick Besan Ladoo in Microwave

Ingredients Needed:

Besan/ Chickpea flour - 1 cup / 50 gms app
Ghee/ Clarified Butter - 3 -4 tsp or as required
Sugar - 3/4 cup - 1 cup of same measure.
Cardamom powder - 2 pinches

Microwave safe bowl
ar (Powdered or the regular fine variety that is found in the US)

Method to prepare:

Mix the besan and ghee in a microwave safe bowl.

Micro for 2 -3 minutes. Stir in intervals after a minute and continue heating.

Keep checking and stirring after a minute. At the end of 3 minutes, the mixture will be a nice reddish brown and will have a nice aroma to it.

If the mixtuer doesn't come together, add more ghee.

Add powdered sugar or fine variety if you have along with cardamom powder. Micro for another 2 minutes. The mixture should not look too dry, otherwise the ladoos will not hold up their shape.

When it is still warm, hold together to form ladoos.

Notes: If you like biting into sugar, use as such else powder it. If the balls are not holding shape, then add 1 tsp more of ghee.

Roasted nuts can be added to the mixture.

From the quantity I made, I got about 4 ladoos.
