Leftover Idlis with Spice Powder in Microwave | Cooking with Leftovers | Step by Step Recipe

For the second week of Blogging Marathon, I decided I should cook for Kids. This month's Kid's Delight edition is hosted by Harini and she chose Dressing up leftovers for Kids. As you might know, this space is more about cooking for kids and the various ways I try to find out dishes that my kids eat without fuss.
To be honest, I normally never deal much with leftovers. Remember leftovers can be what you make for lunch, served for dinner right. This does happen at home at times. Otherwise the concept of refrigerating and eating for the next day is completely not done. Our climate especially doesn't really help on that.
When I was thinking about the leftovers, the only options I can always come out first will be with Idlis. Now don't ask me why. Especially when none of my kids actually like that much. Konda eats it with either coconut chutney or with podi, mostly made as Mashed Idli with podi. While Peddu eats it with groundnut chutney or sambar. Chinnu will not even touch it!

So making it with Podi was the only option I was left with. Must say it was delicious as I eat it too..

Then I remembered that I had got this microwave paniyaram maker sometime back and never really got around using it regularly. so decided that this will be done in Microwave.

These are quite big, meaning about 2 of these will make up your regular single idli. And the cooking time is just 3 minutes.

Leftover Idlis with Podi Masala in Microwave:
Mini Idlis - 14
Onion - 1 medium
Green chilies - 1 long
Coriander leaves
Podi - 3 tsp
Ghee - 1 tsp

How to make Leftover Idlis with Spice Powder

Grease the microwave safe paniyam bowl with oil. Fill the dents with Idli batter. Microwave for 3 minutes. 

In a microwave safe bowl, add chopped onions, chilies with 1 tsp of oil. Microwave for 1 min. Then add roughly cut idlis, add the podi along with ghee. Microwave for 1 -2 mins.

Finally garnish with finely chopped coriander leaves.

Bombay Rava Idli | Upma Rava Idli | Simple and Quick Diabetes Diet

Breakfast being the most important meal of the day, one has to make sure they don't skip it. Most Diettian advice against rice based dishes. When you are on a diabetic diet, the usual idli and Dosa doesn't suit as it is again made with rice. So finding better options with wheat really helps.

This Idli made with Bombay Rava is another diabetes dish that is very quick and Diet friendly recipe. As we think of different dishes for a morning variety, this serves as a quick option. We just soaked the batter for 10 minutes for it to get ready.


Bombay Rava Idli

Ingredients Needed:

Bombay Rava - 1 cup
Hot Milk - as required
Soda a pinch
Salt to taste
Urad dal paste - 1 tbsp (opt)

Method to prepare:

In a bowl, take all the ingredients and slowly mix it with hot milk using a spoon. The consistency should be of pouring state as the regular Idli batter.

Allow it to rest for 10 - 15 mins. Check the consistency to make sure the rava has not absorbed all the milk, if required add little more hot milk.

Then pour the batter into greased idli moulds and steam as you would do with regular idlis


Notes:

Add Urad Dal paste is optional. First time when we made this, we had some Urad dal paste taken from the regular Idlis. But we have checked it again to see if that really made any difference.

If you can make it without adding the Urad dal paste also. If you are grinding Urad dal at home, you can refrigerate it for couple of days.

Upma with Leftover Idli | Idli Upma | Bachelor Feast

It was a relaxed Sunday scene at home. But today being the last day of a ten day long vacation for the kids, there was this increased sense of hurried playing and running around. Breakfast was the usual Poori Channa, which the kids enjoyed. They came back from their play time at Park and were exhausted enough to eat well. 

I wanted the second day of Blogging Marathon to be quite simple. This quick Umpa from Leftover Idlis proved to be the best suited. These Idlis were made with Idli rava and Moong Dal and were also seasoned. But you can make this Upma with the regular idlis that you make. After seasoning, the plain idlis turn into a tasty dish that one can't expect.

Step by Step of making Upma with Leftover Idlies

Take the idlies that are left over.

Grate them using a grater.

You will end up getting a fine crumble of idli powder.

Heat a pan with oil, add the seasoning ingredients, saute till done.

Add the grated idli to the pan, mix well.

Add turmeric powder, saute well. Cover with lid and simmer for 5 mins.

Leftover Idli Upma

Ingredients Needed:

Prepared Idlies - Check How to make Idli
Onion - 1 medium
Curry Leaves 4 -5
Green Chilies - 1 medium
Mustard Seeds, Urad dal - 1 tsp
Bengal Gram - 1 tsp
Turmeric powder 1/2 tsp
Salt to taste
Oil - 2 tsp

Method to prepare:

Get the idlies to room temperature if these are refrigerated, else it might be very cold to handle.

Grate the idlies on a grater. Heat a pan with oil, add mustard seeds, bengal gram, urad dal, curry leaves, Green Chili, and finely chopped onions. Saute till the onions turn light brown.

Then add the grated Idlis to the pan, add turmeric powder, mix everything together. Cover with lid and simmer for 5 mins.

Serve hot!

Amma was really taken in with this taste as she normally never prepares this way. And I was happy having made something that she liked.
