Easy Fudge Recipe | How to make Fudge in Microwave | Chocolate Fudge with Condensed Milk ~ Step by Step Recipe

When I decided on the Blogging Marathon this month, it never struck me that we are going out of town during the Pongal holidays and that I might not be exactly at my desk to check it out. Once I was over my apprehension on that fact, I decided I should at least make these chocolate dishes ready ahead so that I can plan well. Athamma left for her home town a week ahead of us. The day being a Sunday, I decided to make my chocolate dishes in the evening.

First was this simple Fudge recipe where I used only the Semi Sweet Chocolate chunks with Condensed Milk. This is such a quick dish to make, though if you really want to eat it as a fudge you got to wait for at least an hour for it to get solid.  Chinnu was restless and eat it much earlier and loved it every bit. I literally had to hide it for clicking some pictures. Then again I am always in a rush that my pictures these days are so hurried.

Today we are starting the 12th Edition of Blogging Marathon, and I decided on making Chocolates. Since I have Chocolate Mela going on, what other way to enjoy mine and my kid's favorite. So for the next seven days I will be sharing my most liked chocolate recipes.
There is no dearth of chocolate recipes that I have filed up to try. However inspiration for this comes from a glance at one of the cooking show that comes in Chutti TV that runs non stop at my place. I must have seen this recipe couple of times but both the times I was just passing by and I noticed chocolate chip and condensed milk was used. Since I wasn't up to using up my stock of chocolate chips, I thought I should make use of the cooking chocolate slabs that I have with me. I was just going on a hunch to make this and knew however it turns out, I will still have takers for chocolate at home.

Just as thought, my kids loved it. The fudge looked best, in the actual Fudge like after two days, when I tried my best to save up the stock and not let the kids complete it right then. Make very small pieces and stock, use very sparingly as it's highly addictive and you can't just stop with one!


Step by Step Picture Recipe












This is a super quick method to make Chocolate Fudge in Microwave.

Ingredients Needed:

Semi Sweet Chocolates - 1 cup
Condensed Milk - 1/4 cup

How make quick and easy Chocolate Fudge:

In a microwave safe bowl, take the semi sweets chocolate chunks and nuke for a min. Remove and whisk for couple of times. Then again put it back for 30 secs.

Depending on your microwave you may need to micro for another 30 secs. But be very cautious to confirm the chocolate is melted is not getting burnt.

Remove and whisk again for a smooth texture.

Add condensed milk and microwave for 1 min 30 secs. Whisk well to get a smooth sauce.

Prep a plate and cover with aluminum foil. Grease with butter/ ghee.  Pour the chocolate sauce over the prepped plate and refrigerate for at least an hour. Cube into smaller pieces and indulge in this sinful temptations.

While I was making it Konda was restless to taste. When she did, she said it tastes so much like cadburys' dairy milk chocolate. And couldn't wait to eat it. I always think the best compliment she gives is when she says she wants to take it for her friends.

Besan Ki Burfi | How to make Besan Ki Barfi in Microwave | Diwali Sweets | Step by Step Recipe

Besan Ki Burfi can be simply referred as Mysore Pak. However something made google and I came to learn lot more than I expected. In gujarati, it's also called Magas. And the way it is prepared is little different. Same measurement, yet a different method and you arrive at a different textured sweet.

In Mysore Pak also you get two different versions. One the ghee dipping version and the other version that has a honeycomb texture, which actually uses less ghee than the first one. I have made both versions of Mysore pak last year. So I wasn't planning on making another this year.

Yet for the last day of Blogging Marathon, special on Indian Sweets, I came upon this recipe that went by the name Chana dal Burfi / Besan Ki Burfi. Reading through the recipe I realized the ingredients and measurement were different. So I decided I might as well make it and moreover in microwave as I always felt cooking Besan in microwave is pretty easy.

Of course, I had to time it very carefully as my first attempt in making Almond Katli ended up with a burnt one for the first batch. So there I was, popping it and pulling it out every other min, making sure I caught it right. As you know cooking in microwave, takes very less time. So I was making sure I calculate the time correctly.

Besan is also referred as Channa Dal powder. As I had said earlier, Burfi / Barfi is a sweet in fudge form and not that loose form that gets to be called Halwa. Same ingredients and measurements. Cooking time differs to get a different sweet altogether.

Besan Ki Burfi / Barfi

Ingredients Needed:

Besan / Channa Dal - 1 cup
Milk powder - 1 cup
Ghee - 1 cup
Sugar - 1 & 1/2 cup
Water - 2 cups
Roasted nuts for garnish

Microwave safe bowls.


How to make Besan Ki Burfi

Microwave the ghee for a min.

Mix in Besan and roast for 2 mins. Stir the mix in between a min. Once done, remove and mix in the milk powder. Set it aside.

In another microwave safe bowl, add sugar and water. Micro for 3 mins. Once the sugar melts, strain it to remove impurities if any. Then again micro for 3- 4 mins. You will see the syrup all thick and can form one thread consistency.

Remove and pour this syrup into the besan- milk powder mix and combine everything well. Microwave for 2 mins.

After a minute, you will notice the mix all coming up frothy. Beat it up well and again micro for another minute.

You will know it's done, when you notice the mix sliding away from bottom. If required micro for another 30 secs.

Remove, beat well and pour into a greased plate. Allow it to cool, cut into pieces.

Garnish with nuts on top.


Notes: From what I read, for making Magas, the sugar is not melted but added as such for it to set. I guess that will give it's a grainy texture. In this microwave method, however the sugar was completely melted.

Badam Katli | How to make Badam Katli in Microwave | Diwali Sweets | Step by Step Recipes

For the third of BM, I wanted to post something from Jayasree Satish's blog. I selected this simple and easy Badam Katli. The best part was it being done in Microwave and doesn't take much time. Though I had planned on few other recipes, I wanted to make something from her blog. She says she replaced badam in place of Kaaju, which is normally made as Kaaju Katli. The taste was awesome, though mine didn't exactly come out as the smooth textured katlis in the beginning. I allowed it to rest for some time, nearly couple of hours. Maybe it would have set within 30 mins or so. After that I rolled out, it came out well set.

Cooking in microwave takes only 5 mins, since I halved the measurement, it was almost only 3 mins 30 secs. You ought to be careful with the time in the last stage, else you will end up with a burnt mix.

Badam Katli | Almond Cake

Ingredients Needed:

Badam powder - 1 cup
Milk powder - 1/2 cup
Milk - 1 tbspn
Powdered Sugar - 3/4 cup


How to make Badam Katli in Microwave

Powder the almond in a mixer along with it's skin. Similarly powder the sugar also.

In a microwave safe bowl, mix all the ingredients along with milk.

MW for 2 minutes., remove and stir. Again micro for 1 min.

When you remove at this stage, the mix will turn dry and starts frothing on the surface. Remove from the MW.

Keep mixing with a ladle for 3 more minutes. It gets dried in the heat trapped in the mixture. Allow it to cool for 5 mins.

When warm, knead into a smooth dough and spread on a greased surface. Pat it using a rolling pin and mark the pieces using a knife.

You can still roll out to a smooth texture after it cools down also.
